25 in 25 Conclusion: B+ on the Fiber Project

I just barely finished the challenge I created for myself of consuming 25 grams of fiber per day for 25 days (25 in 25).  When I say barely I mean the porcelain god took over.  Not because I consumed too much fiber, oh no, but because I got a bit of the stomach bug on the last 4 days of the challenge.  I  will fully admit that I did not successfully consume 25 grams of fiber each day.  On average, for the second part of my 25 days, I was able to take in about 22 grams per day.  This is not all that bad, and I am still quite proud of myself.  Interestingly enough, I am finding that over the last week, when my stomach bug eventually left my house, I have noticed a huge difference in both my blood sugars and my appetite.  I have taken my focus off of fiber and given myself a break from counting food labels, and I have noticed my blood sugars have been a bit more sporadic and bouncing up and down, especially in the morning, and I am finding that I am much hungrier at dinner time if I didn’t have a good amount of fiber in my lunch.

Conclusion:  It is possible to get 25 grams of fiber per day in your diet, but it takes a lot of work, dedication, and overall healthy eating on a regular basis to do it.  I have learned from this little project that while I am always watching my carb intake in order to keep my blood sugars in check I also need to try remember that fiber is my friend, and while it doesn’t always stick out like a sore thumb in most foods, if you look for it, you can find it 🙂
